Beet, Pear and Goat Cheese Salad with Grilled Chicken

Beets are a great source of folic acid, potassium, calcium and antioxidants (betacyanin), which gives them their rich red colour.
Ingredients
8 cups salad greens
2 cooked beets, sliced
2 pears
1 small red onion
3 cups cooked sliced chicken breast
1 recipe preparedBalsamic Vinaigrette Dressing
1⁄4 cup crumbled goat cheese
Preparation
- Fill serving bowl with greens and top with beets, pears, onion and chicken.
- Drizzle with Vinaigrette and gently toss. Top with goat cheese and serve.
