4 cups mixed greens, finely chopped
2 cans (14 oz/398 ml) lentils
1 cup cooked pearl or pot barley
1 1⁄2 cups diced apple, peach, plum, or grapes
1⁄2 cup crumbled feta
1⁄4 cup pickled red onion, finely chopped
1⁄3 cup toasted nuts, your choice, chopped
- In a large bowl, combine greens, lentils, barley, apple, feta, and onion.
- Pour dressing over the salad and toss to combine
- Just before serving, top with nuts.
