Grilled Chicken Curry Caesar Salad
Finally, a low-calorie, protein-packed Caesar salad that’s delicious and filling!
1 tbspCaesar Dressing Mix
1 tbsp low-fat plain yogurt
1⁄4 tspMinced Garlic
1 1⁄2 tsp lemon juice
2 tbsp extra-virgin olive oil
2 tbsp low-fat milk
2 tbsp grated Parmesan cheese
Black Pepper (Grinder), to taste
1 tbsp vegetable oil
4 cooked chicken breasts, or equivalent tofu, cubed
1 tbsp Mango Curry Dip Mix, or curry seasoning
6 cups chopped Romaine lettuce
1⁄2 cup whole-grain croutons
- Whisk together dressing ingredients and set aside.
- Heat oil in frying pan over medium heat. Add chicken and curry. Cook thoroughly and set aside.
- In a large mixing bowl, toss lettuce with dressing. Mix in croutons and top with chicken. Serve immediately.
