Using zucchini in this recipe is a great way to sneak in veggies, while keeping the cake super moist.


Ingredients

vegetable oil

sugar

1 tsp
vanilla extract

buttermilk

flour
14 cup
cocoa powder
1 tsp
baking soda
1 tsp
salt
2 cups
grated zucchini
34 cup
walnut pieces
23 cup
dark chocolate chips

Preparation
  1. Preheat oven to 325° F (160° C).
  2. Lightly spray a 9" x 13" pan with vegetable oil.
  3. Cream together first six ingredients.
  4. Sift together flour, cocoa, baking soda and salt, and add to creamed mixture.
  5. Fold in zucchini and pour into prepared pan. Sprinkle with walnuts and chocolate chips.
  6. Bake for 45 minutes.
