Double Chocolate Zucchini Cake

Using zucchini in this recipe is a great way to sneak in veggies, while keeping the cake super moist.
Ingredients
1⁄2 cup butter
1⁄2 cup vegetable oil
1 3⁄4 cups sugar
2 eggs
1 tsp vanilla extract
1⁄2 cup buttermilk
2 1⁄2 cups flour
1⁄4 cup cocoa powder
1 tsp baking soda
1 tsp salt
2 cups grated zucchini
3⁄4 cup walnut pieces
2⁄3 cup dark chocolate chips
Preparation
- Preheat oven to 325° F (160° C).
- Lightly spray a 9" x 13" pan with vegetable oil.
- Cream together first six ingredients.
- Sift together flour, cocoa, baking soda and salt, and add to creamed mixture.
- Fold in zucchini and pour into prepared pan. Sprinkle with walnuts and chocolate chips.
- Bake for 45 minutes.
