Chocolate Banana Muffins

A delicious way to get kids to eat their fruit-with just enough chocolate, it feels like a treat!
Ingredients
1 1⁄2 medium bananas
1 cup sugar
1⁄4 cup vegetable oil
1 egg
1 tsp vanilla extract
1 cup all-purpose flour
1 tsp baking powder
1 tsp baking soda
1 tspCinnamon
1 cup low-fat plain yogurt or low-fat sour cream
1⁄4 cup milk chocolate chips
Preparation
- Preheated oven to 375° F (190° C).
- Mash bananas with a fork, measuring about 1 1⁄2 cups.
- Using an electric mixer, beat bananas with sugar, oil, egg and vanilla extract in a large bowl until well mixed.
- Whisk flour with baking powder, baking soda and Cinnamon in a large bowl. Pour banana mixture overtop. Using a spoon, gently stir together, then stir in yogurt and chocolate chips.
- Spoon batter into a lightly oiled muffin pan and bake in centre of oven for 15-18 minutes until a cake tester inserted in centre of muffin comes out clean. Let stand 2 minutes, then turn out of pan.
