SUNDAY

Slow Cooker Pulled Pork

SERVES: 20

TIME: 3 hours 5 min (3 hrs slow cook time)

PER SERVING: CA $1.05

TIP:

Trim any excess fat off your pork shoulder or roast, leaving only a thin layer of fat to keep it moist.

If you have time, let roast rest for 15 minutes before shredding to fully absorb the flavours.

Tuck into toasted buns and top with ½ cup coleslaw each to make pulled pork sandwiches.

Not feeding a whole crowd? To repurpose leftovers, head to epicure.com for recipes galore using prepared pulled pork, such as pizza, baked potatoes, nachos, and tacos.

Swap boneless, skinless chicken for pork to make pulled chicken.

WHY WE LOVE IT:

Prep in less than 5 minutes, then set it and forget it!

Classic BBQ staple on a budget—only $1 per serving!

High protein meal that will satisfy and fuel your day — one serving contains 26 g of protein!

CHANGE IT UP!

No time to cook? Mix 2 lbs (900 g) ground pork with seasoning and ¼ cup water. Freeze until needed, then cook on the stove.

MONDAY

Mac & Cheese

SERVES: 4

TIME: 13 min

PER SERVING: US $1.12

TIP:

Stir leftovers from yesterday’s Pulled Pork into your mac & cheese to add protein and give the meal a satisfying, smoky flavour. Stir in some Dijon mustard for a subtle kick and sprinkle of sliced green onion over top to finish the dish.

Serve with a side salad.

Cook macaroni in Multipurpose Steamer! Refer to the steamer’s insert card for instructions, or look up the recipe for Steamer Mac & Cheese on epicure.com.

Shave 5-8 min off prep time when you cook the pasta the night before and reheat in Round or Multipurpose Steamer.

WHY WE LOVE IT:

One of Epicure’s best-selling Meal Solutions for its kid-friendly flavours, quick and budget-friendly recipe, and option to customize with non-dairy milk.

TUESDAY

Chicken Souvlaki

SERVES: 8

TIME: 20 min

PER SERVING: US $2.75

TIP:

Prep ahead on Monday night! Slice pepper and onion, and toss all the ingredients in a large bowl. Cover and marinate in the fridge overnight. Come dinnertime on Tuesday, just transfer to sheet pan and roast in the oven!

Serve on pitas or over rice with an extra splash of lemon juice.

Pair with Greek Dressing or Dillicious Tzatziki. You can find recipes on epicure.com.

For an even speedier souvlaki, microwave half the recipe in Multipurpose Steamer on high until chicken is cooked through, about 7 minutes.

WHY WE LOVE IT:

Cook once, eat twice—this recipe makes 8 servings so lunch for the next day is taken care of! Leftovers taste great cold tossed with leafy greens for a boost of fibre.

CHANGE IT UP!

No time to cook? Coat 2 lbs (900 g) chicken with seasoning. Freeze up to 1 month. Defrost, then roast in the oven.

WEDNESDAY

Sweet Garlic Chicken

SERVES: 4

TIME: 12 min

PER SERVING: US $3.33

TIP:

Pat chicken thighs dry with a paper towel or clean cloth before tossing with the other ingredients to remove excess moisture. This helps the meat brown more nicely and cook more evenly.

Chop chicken thighs and potatoes into smaller pieces for faster cooking.

While the sheet pan meal is roasting in the oven, prep a salad to round out your plate.

Roast extra potatoes to serve with tomorrow‘s Butter Chicken.

WHY WE LOVE IT:

Speedy weeknight recipe. This one-pan meal goes from raw to ready in only 20 minutes with minimal cleanup required.

CHANGE IT UP!

No time to cook? Coat 1½ lbs chicken (675 g) with seasoning. Freeze up to 1 month. Defrost, then roast in the oven.

THURSDAY

Butter Chicken

SERVES: 8

TIME: 20 min

PER SERVING: US $2.30

TIP:

Use ground chicken instead of breasts—it costs less and cooks faster.

Make this recipe vegan by swapping tofu or 2 cans of chickpeas for chicken, and using coconut oil and coconut yogurt.

This recipe makes 8 servings. Pick up extra pita bread to serve with leftovers (you’re already getting some for Chicken Souvlaki); lunch is solved!

Take chicken out of the freezer for tomorrow’s Chicken Steaks with Creamy Mushroom Sauce.

WHY WE LOVE IT:

Butter chicken made easy—you only need 20 minutes and a few ingredients to make a restaurant-quality dish at home on a budget.

CHANGE IT UP:

SERVES: 6

TIME: 18 min

PER SERVING: US $2.63

TIP:

Replace water in the recipe with your favourite Epicure Broth for added flavour.

For a vegetarian option, swap firm, cubed tofu for chicken.

Serve with a wholegrain dinner roll and side salad.

For an extra serving of veggies, stir frozen veggies like peas in to the sauce, or add any other leftover produce you have from the week.

Worcestershire sauce is a pantry staple that can enhance the rich, umami flavours of food.

One-pan dish that’s sure to impress, at less than $3 per serving.

High in protein to keep you full between meals and curb cravings — one serving contains 28 g of protein!

Pre-bake and cool tart shells ahead of time so you can make tarts in 20 minutes.

Prep recipe on Sunday for easy grab-and-go desserts throughout the week. Store in an air-tight container in the fridge layered with parchment paper to prevent sticking.

For extra lemony flavour, add lemon zest to your curd.

Serve alongside fresh or frozen berries. This will taste great with any kind of berries so pick up whatever is on sale!

WHY WE LOVE IT:

At only 100 calories per tart, this is an Epic Life approved dessert!

Fresh lemon is already in the blend—no need to buy lemons!

NEW ARRIVAL

Lemon Chicken Orzo

SERVES: 4

TIME: 20 min

PER SERVING: US $5.66

TIP:

Instead of orzo, serve prepared sauce, chicken, and veggies over rice or your choice of pasta.

If you don’t like capers, it’s okay to omit them from the recipe. However, they add a briny, salty quality to the dish.

It will be very saucy right off the stove but will thicken as it gets absorbed by the orzo while it sits.

WHY WE LOVE IT:

Already a top seller with mass appeal flavours for the whole family!

One-pan meal with no chopping or slicing, and quick, easy clean up.

CHANGE IT UP:

No time to cook? Mix 1 lb (450 g) chicken with seasoning. Freeze up to 1 month. Defrost, then roast in the oven.

NEW ARRIVAL

Yaki Udon

SERVES: 4

TIME: 20 min

PER SERVING: US $4.23

TIP:

For this meal, any type of chicken will work. However, chicken thighs are recommended because they offer better flavour and moisture retention during cooking.

Add a drizzle of sriracha, soy sauce and/or sesame oil at the end.

Try broccoli slaw instead of regular cabbage coleslaw blends.

This recipe is a great jumping off point—don't be afriad to customize it to your preferences! Change up the noodles (try stir-fry noodles or even rice), swap in your favourite veggies, and use your choice of protein, such as beef strips or pork. We guarantee it’ll be delicious no matter what!

WHY WE LOVE IT:

Better than takeout! Perfectly balanced plate for one-third of the cost of takeout.

One-pan meal for easy prep and clean up.
