Make the best of farmer’s market produce. Cook once, and enjoy for up to three days in your fridge.
4 oz (110 g) grilled chicken, or protein of your choice
1 beet, steamed, cut in cubes
1⁄2 cup radish, finely sliced
1 cup carrot ribbons
2 tbsp goat cheese, crumbled
1 cup baby kale or spinach
- Layer all items in order starting with the dressing, seal with the lid, grab a fork and napkin, and off you go!
