12 crackers, such as rice, matzo, or your favourite
12 tbsp thick Greek yogurt, skyr, or labneh
1⁄2 tsp grated lemon peel, optional
12 small slices smoked salmon (about 5 oz/140 g)
- Stir together yogurt and lemon peel, if desired.
- Spread over crackers; top with salmon.
