Peach and Tomato Salsa

Ingredients
1 cup finely diced peaches
2 tbspPoco Picante Salsa Mix
1 cup diced tomatoes
cilantro, optional
Sea Salt
squeeze of lemon juice, optional
Preparation
- Sprinkle peaches with Salsa Mix and cilantro, if desired.
- Coarsely mash, then stir in tomatoes and a minced shallot, if desired.
- Season with Sea Salt and a squeeze of lemon juice.
- Refrigerate 1 hour before serving.
