A Greek-inspired salad ready in only 10 minutes.
2 cups shredded kale
1 cup cherry tomatoes
1⁄2 cucumber, sliced
1⁄4 small red onion, thinly sliced
1 can (19 oz /540 ml) chick peas, drained and rinsed
1⁄4 - 1⁄2 cup crumbled feta cheese
Sea Salt, optional
Black Pepper, optional
- In a large serving bowl, mix the first six ingredients together.
- In a second bowl, toss chick peas with sauce and layer over salad mixture.
- Top with feta, season, and serve.
