Italian-style Fish Fillets with Pesto
Fish in a flash – a gorgeous, healthy dinner ready in 20 minutes.
2 tbsp olive oil, divided
1 lb (450 g) fish fillets
Black Pepper (Grinder), to taste
1⁄2 cup diced tomatoes
2 tspPesto Sauce Mix
- Heat 1 tbsp oil in a frying pan over medium-high heat.
- Lightly season fish with Black Pepper and place in pan.
- Combine tomatoes, Pesto Sauce Mix and remaining oil in a small mixing bowl. Spoon over fillets.
- Cover pan and cook for 8–10 minutes, or until fish is opaque.
