Fish in a flash – a gorgeous, healthy dinner ready in 20 minutes.


Ingredients
2 tbsp
olive oil, divided
1 lb (450 g)
fish fillets
Black Pepper, to taste
12 cup
diced tomatoes
2 tsp

Preparation
  1. Heat 1 tbsp oil in a frying pan over medium-high heat.
  2. Lightly season fish with Black Pepper and place in pan.
  3. Combine tomatoes, Pesto Sauce Mix and remaining oil in a small mixing bowl. Spoon over fillets.
  4. Cover pan and cook for 8–10 minutes, or until fish is opaque.
Tips

Thanks to its high basil content, 1 tbsp Pesto Sauce Mix has more antioxidants than 12 cup chopped sweet cherries.
