Easy Ratatouille

An easy-to-make version of the classic French stewed vegetable dish. Makes a great side dish or an appetizer spooned onto crostini or crackers.
Ingredients
1 can (14 oz/398 ml) diced tomatoes, drained
2 bell peppers, diced
1 small zucchini, diced
1⁄2 eggplant, diced
1 tbsp3 Onion Dip Mix
1 tbspPesto Sauce Mix
2 tbsp olive oil
Sea Salt (Grinder), to taste
Black Pepper (Grinder), to taste
Preparation
- Combine first six ingredients in a Multipurpose Steamer.
- Microwave, with lid on, for 10 minutes on high.
- Drizzle with olive oil and season to taste.
