A fast and easy bean soup inspired by Tex-Mex flavours, made with canned beans simmered in a spiced tomato broth with sweet pepper, onions, and garlic. Hearty, warming, and ready in minutes.

Ingredients

2 Tbsp Toasted Onion
1 cup diced zucchini
2 Tbsp Guacamole
4 cups prepared Nourish Broth
1 - 28oz (796 ml) can low sodium diced tomatoes
1 - 19oz (540 ml) can black beans, drained and rinsed
Salt and Pepper, to taste
Optional Toppings - avocado, squeeze of lime, grated cheese, crumbled tortilla chips, green onion

Preparation

1. Combine all ingredients in a large pot. Bring to a boil, reduce heat and simmer for 10 - 15 minutes.
2. Serve into bowls and enjoy (dress it up with toppings if you wish!)
