Tuna Casserole Supreme
Tuna is rich in heart-healthy omega-3 fats.
3 tbspGuacamole Dip Mix
1 ripe avocado, mashed
1 cup light sour cream
1 tbsp lemon or lime juice
2 cans (4 oz/120g) light tuna
4 cups cooked brown rice
3⁄4 cup low-fat marble cheese
- Preheat oven to 400° F (205 ° C).
- Combine first 3 ingredients in a large mixing bowl and mix well. Add remaining ingredients (except cheese) and stir to combine.
- Transfer to oven-safe casserole dish and top with cheese. Bake for 30-40 minutes, or until warmed through and cheese is bubbling. Serve warm.
