1 tbsp Spinach Dip Mix
1 1⁄2 cups long-grain rice
2 cups frozen spinach
juice of 1 lemon
1 recipe prepared El Greco Sauce, or sauce of your choice
Sea Salt (Grinder), to taste
Black Pepper (Grinder), to taste
- Place Broth, rice and Spinach Dip Mix in a Multipurpose Pot. Bring to a boil. Reduce heat to low and simmer, covered, for 15–20 minutes, until all the liquid is absorbed.
- Transfer to a serving bowl. Fold in spinach and lemon juice. Serve with a dollop of sauce. Season to taste.
