Oodles of zoodles! We love using fresh zucchini to make a low-carb pasta dish. Best of all, the whole dish is prepared in the microwave – less mess and less stress!  


Ingredients
1 12 cups
milk
4 small
zucchinis, spiralized into thick noodles
2 cups
chopped broccoli
1 cup
frozen peas
Grated Parmesan cheese, to taste

Preparation
  1. In a Multipurpose Steamer combine mix with milk. Microwave, uncovered, on high for 4–5 min,  or until thickened, whisking halfway through.
  2. Add zucchini noodles, broccoli and peas. Gently toss to mix.
  3. Cover and microwave on high 1–2 min, or until veggies are tender. Top with cheese, as desired. 
Tips

Add fresh avocado on top for even more green.

Perfectly Balance Your Plate

Serve with 1 cup mixed greens, 12 cup chickpeas and 1 tsp Epicure dressing.
