1⁄2 cup dark chocolate chips
1⁄2 cup sugar
1⁄3 cup dark rum
1⁄4 cup corn syrup
2 1⁄2 cups finely chopped chocolate wafer crumbs
3⁄4 cup finely chopped nuts
cocoa or icing sugar, ground nuts, chocolate wafer crumbs or chocolate sprinkles, for decorating – optional
- Melt Chocolate in stainless-steel bowl over hot water.
- Mix in sugar, rum and corn syrup. Stir in chocolate wafer crumbs, Cinnamon and nuts. Mix thoroughly. Scrape down sides of bowl, cover and refrigerate until mixture is firm.
- Form into 1” balls, roll in your choice of cocoa, icing sugar, ground nuts, chocolate wafer crumbs or chocolate sprinkles.
- Layer in an airtight container, placing a sheet of parchment paper between layers. Rum balls will keep for up to 1 month in freezer.
