Red Adobo Sauce with White Fish

Ingredients
2 tbsp Adobo Seasoning
1⁄3 cup vinegar
2 tbsp olive oil
1 tbsp tomato paste, or ketchup
4 (4 oz/120 g) fresh or frozen white fish fillets
lemon pepper, to taste, optional
Preparation
- Preheat oven to 375° F (190° C).
- Combine Adobo Seasoning with vinegar, oil, and tomato paste. Place fish in roasting dish, and rub Red Adobo Sauce over entire surface of fish.
- Season with lemon pepper if desired.
- Roast for 15–20 minutes until fish is flaking and it easily comes apart.
