Ratatouille Black Bean Chili

Comforting veggie chilli can be made in minutes!
Ingredients
1 small yam, coarsely chopped
1 small zucchini, coarsely chopped
1 - 2 tbspPoco Picante Salsa Mix
1 tsp3 Onion Dip Mix
1 can (14 oz/398 ml) diced tomatoes
1⁄2 can (14 oz/398 ml) black beans, drained and rinsed
Preparation
- In a bowl or directly in Rectangular Steamer, combine all ingredients.
- Cover with lid and microwave on high for 8–10 minutes.
- Eat all by its lonesome, or serve on rice or quinoa.
