Quickie Quesadilla

A meatless, super cheesy black bean quesadilla ready in 15 minutes.

Serve with 1⁄2 cup salsa, 1 cup veggies and 2 tbsp prepared Epicure dip.
Ingredients
4 flour or corn tortillas, 6"
1⁄4 cup Epicure dip, prepared
1 can (14 oz/398 ml) black beans
2 cups low-fat cheddar cheese
Preparation
- Preheat oven to 400° F (205° C). Arrange tortillas on a Sheet Pan lined with a Sheet Pan Liner.
- Spread dip on half of each of the tortillas. Top with beans and cheese, then fold tortillas over filling.
- Bake for 10 minutes or until cheese has melted and tortillas are starting to turn brown. Cut each quesadilla into wedges and serve.
