Lemony Chickpea Salad
The nutty flavour and buttery texture of chickpeas make this salad both satisfying and nutritious.
1⁄4 cup olive oil
1 tbspGreek Dressing Mix
1 can (14 oz/ 398 ml) chickpeas, rinsed and drained
1 small red or green bell pepper, diced
1 small onion, finely diced
1 radish, optional
Sea Salt (Grinder), to taste
Black Pepper (Grinder), to taste
- Whisk together olive oil, lemon juice and dressing mix in a mixing bowl.
- Add chickpea, peppers, onions, and radish, tossing to coat. Season to taste with salt and pepper. Serve at room temperature.
