Jamaican Jerk Chicken
6 boneless, skinless chicken breasts
2 tbsp Jamaican Jerk seasoning
1 tbsp dark rum, optional
1 lime, juiced
1 tbsp vegetable oil
- Rub chicken breasts with Jamaican Jerk seasoning, dark rum, lime juice and vegetable oil. Marinate in refrigerator for up to 4 hours.
- Preheat oven to 400° F (205° C).
- Lightly spray a frying pan with vegetable oil.
- Quickly sear rubbed chicken breasts over medium-high heat. When both sides are browned, place pan in oven for approximately 15–20 minutes.
