Italian Chicken and Cheese Casserole
Thanks to the cooked tomatoes in the marinara sauce, this recipe is a great source of lycopene, an anti-cancer pigment.
2 cups soft breadcrumbs
1 tbspHerb & Garlic Dip Mix
1 tbsp3 Onion Dip Mix
4 boneless chicken breasts
3 tbsp vegetable oil
2 cupsMarinara Sauce
1 cup grated low-fat mozzarella cheese
- Preheat oven to 325° F (160° C).
- Combine breadcrumbs with Herb & Garlic Dip Mix and 3 Onion Dip Mix in a bag. Add chicken, shaking well to coat.
- Heat oil in frying pan over medium-high heat. Brown chicken well on both sides.
- Add Marinara Sauce. Cover with mozzarella and bake, uncovered, for 45 minutes.
