Garden Veggie Family Frittata
A quick and tasty breakfast the whole family will love!
Perfectly Balance Your Plate
Serve on 1⁄2 cup mixed greens with 1 slice toast and 2 tsp nut or seed butter.
2 bell peppers
1 yellow or green zucchini
8 mixed cherry tomatoes
2 tsp3 Onion Dip Mix, or Dip Mix of your choice, divided
Sea Salt (Grinder), to taste
Black Pepper (Grinder), to taste
1⁄2 cup crumbled goat cheese or feta cheese
Toppings (optional): Better Than Bacon Topper, yogurt or sour cream
- Dice peppers and zucchini. Cut tomatoes in halves. Place in Round Cake Pan; season with 1 tsp mix, salt and pepper.
- In a large bowl, whisk eggs with remaining 1 tsp dip mix.
- Pour egg mixture over veggies; stir in cheese. Microwave, uncovered, 11–12 min, or until centre is set when pan is jiggled.
- Cut into wedges with a silicone spatula and add toppings, if using.
