Easy Bruschetta Pasta

This is a simple, no-cook pasta sauce. Fresh tomatoes are the star here, so be sure you’re using ripe, juicy ones. This recipe is uber flexible—make it with any kind of tomato, such as plum, grape, cherry, or funky-shaped heirloom ones. You should have 3 cups chopped of whatever you choose.

Ingredients
2 cups uncooked penne or bite-size pasta
3 medium tomatoes
2 tbsp balsamic vinegar
2 tbsp olive oil
1⁄2 cup grated Parmesan cheese
Toppings (optional): balsamic vinegar reduction, basil leaves
Preparation
- In a large pot or Multipurpose Steamer, cook pasta according to directions. Drain.
- Meanwhile, chop tomatoes. Remove cores, if desired.
- Add tomatoes, vinegar, oil, and seasoning to pot; toss with pasta. Stir in cheese. Add toppings, if desired.
