Cherry Tomato Salad
A taste of summer, a light lunch, a zesty Mexican side – this makes a beautiful, delicious dish year-round.
2 tbsp balsamic vinegar
1 tbsp olive oil
2 tspPesto Sauce Mix
4 cups cherry tomatoes, cut in half
3 tbsp red onion, finely diced
Sea Salt (Grinder), to taste
Black Pepper (Grinder), to taste
- Whisk balsamic vinegar, olive oil and Pesto Sauce Mix in a serving bowl.
- Add cherry tomatoes and red onion. Toss gently to coat with dressing.
- Season to taste with salt and pepper.
