Cheddar & Jalapeño Cornbread Mini Loaves

Ingredients
1⁄4 cup unsalted butter
3⁄4 cup milk, your choice
2 eggs
1⁄2 cup grated cheddar cheese
Toppings (optional): Better Than Bacon Topper, sliced jalapeño, grated cheese
Preparation
- Preheat oven to 400° F. Generously oil Mini Loaf Pans. Place on Sheet Pan.
- Cube butter. In a large microwaveable bowl, heat milk and butter on high for 1 min. Remove from the microwave, whisk until butter melts.
- Whisk in eggs until foamy; add mix. Whisk vigorously until no lumps remain.
- Stir in cheese.
- Divide evenly between pans. Add toppings, if desired.
- Bake 17–18 min or until golden brown and a toothpick inserted in the center of the loaves comes out clean. Rest in pan 10 min or until cool enough to unmold.
