Melt-in-your-mouth pulled pork topped with crisp coleslaw and tucked into a soft bun. Sweet, smoky, tangy, and irresistibly satisfying.

Ingredients

2 cups prepared Pulled Pork (chilled or at room temperature)

1/2 cup each 2% plain yogurt and mayonnaise

2 tbsp Lemon Dilly Dip Mix

3 tbsp white vinegar

1 tbsp sugar

Sea Salt (to taste)

Black Pepper (to taste)

1/2 small cabbage (about 5 cups)

4 medium-sized panini buns or chopped baguette

1/4 red onion (optional)

Preparation

  1. In a large bowl, stir together yogurt, mayo, dip mix, vinegar, sugar, salt and pepper. Add thinly sliced cabbage (or coleslaw mix). You should have about 5 cups. Add to bowl; stir to combine. If making ahead, keep refrigerated, up to 3 days.
  2. Split buns and lightly toast, if desired.
  3. Slice onion (if using)
  4. Pile pork onto split buns and top with 1/4 cup coleslaw. Top with onion if desired. Serve with remaining coleslaw on the side.

Recipe Note

For added tang and freshness, give the red onion a little more love. Add sliced red onion to a large bowl. Squeeze in juice from 1 lemon, then add a pinch each of sugar and salt. Using your hands, gently toss and squeeze onion to help soften it slightly.
