Philly-Style Cheesesteak with Garlic Mashed Potatoes

Ingredients

  • 2 bell peppers
  • 1 small yellow onion
  • 1 lb (450 g) thinly sliced beef strips
  • 3 cups sliced mushrooms
  • 1 tbsp oil
  • 1 pkg Philly-Style Cheesesteak Seasoning
  • 1 cup grated mozzarella or provolone cheese
  • 4 medium potatoes
  • ¾ cup milk
  • 2 tbsp unsalted butter
  • 1 tsp Herb & Garlic

Preparation

PHILLY-STYLE CHEESESTEAK FILLING 

  1. Preheat oven to 375° F. 
  2. Slice peppers and thinly slice onion. In a large bowl, combine peppers, onion, beef, mushrooms, oil, and seasoning. Toss until well coated.   
  3. Arrange in a single layer on a sheet pan as best you can. Roast for 15 min. Remove from oven; sprinkle with cheese. Place back in the oven and roast for 2 min, or until the cheese is melted.  

MASHED POTATOES 

  1. While filling is roasting, chop potatoes into 1" cubes. Boil until fork-tender (about 15 - 20 minutes) 
  2. Meanwhile, heat milk with seasoning in a small pot
  3. Mash or whip potatoes until lump-free. Add heated milk mixture and butter, stirring until smooth.
  4. Top mashed potatoes with cheesesteak filling.
