Honey Garlic Stir Fry

Ingredients

1 tablespoon oil (vegetable, olive or avocado)
1 cup thinly sliced peppers
2 - 3 cups broccoli florets
1 lb boneless skinless chicken breasts, cut into 1inch pieces
1/2 cup Nourish Broth or water
1/4 cup soy sauce
1 tbsp honey
1 pkg Honey Garlic Meatballs

Preparation

1.     Chop peppers, broccoli and chicken into 1” pieces.
2.     Heat oil in large skillet over medium-high heat.
3.     Add the chicken to the skillet and brown on one side, about 3 - 4 minutes.
4.     Meanwhile, whisk the seasoning, water and honey together until well combined. Set aside.
5.     Turn chicken pieces over to begin cooking the other side for 2 - 3 minutes. Add the peppers and broccoli and cook for additional 1 - 2 minutes until chicken is cooked through and veggies are tender crisp.
6.     Pour the sauce mixture over the chicken and vegetables. Bring to a boil and cook for 1 more minute or until sauce has just started to thicken. Sauté frequently to ensure chicken and veggies are well coated.
7.     Serve immediately, with rice if desired.
