Prep these ahead for nutritious, grab-and-go breakfasts all week. Just add a side of berries for a healthy, friendly way to start your day.
Ingredients
1 can (19 oz/540 ml) chickpeas (drained and rinsed)
1 cup quick oats
2 scoops Vanilla Power Up Protein Blend
1/2 cup nut or seed butter (your choice)
1 tbsp coconut oil (melted)
2 tbsp maple syrup or honey
1/4 cup mini chocolate chips
Preparation
In a food processor, add chickpeas, nut butter, maple syrup, oil, oats, and protein blend. Pulse until smooth, scraping down the sides as necessary. If needed, add water, 1 tbsp at a time, until mixture comes together.
Transfer to a bowl and stir in chocolate chips.
Roll dough into 12 balls and place on a lined sheet pan. Refrigerate 15 min.
These are a great make ahead breakfast for the week. Refrigerate them in a sealed container—they taste even better when they’ve had time to chill longer!
