Crispy on the outside and fluffy on the inside, these smashed potatoes are roasted to golden perfection and tossed in savoury seasoning for bold, comforting flavour. Each bite delivers a satisfying crunch, paired perfectly with rich, herb-forward gravy that comes together in minutes. Simple yet elevated, this dish makes a delicious side that’s sure to steal the spotlight.

Ingredients

1½ lbs (675 g) baby potatoes
2 - 3 tbsp oil
2 tbsp Savoury Herb Gravy
1 cup water
SPG, to taste

Preparation

  1. Preheat oven to 425° F. Line Sheet Pan with parchment.
  2. Place potatoes in a medium pot and cover with cold salted water. Bring to a boil, then simmer 12- 15 minutes, until fork-tender but not falling apart. Drain well.
  3. Meanwhile, make gravy. COMBINE 2 tbsp mix into 1 cup water.  COOK over medium high heat until gravy comes to a boil, simmer 1 minute, stirring constantly until thickened 
  4. Place warm potatoes in a bowl and toss with 2 - 3 tbsp oil.
  5. Spread in a single layer on pan. Using the bottom of a bowl or cup, smash potatoes down to about ¼"–½" thick. 
  6. Roast 10–15 min, until edges start to crisp up. Serve immediately with Savory Herb Gravy. Sprinkle with SPG to taste.
