Feel Better Chicken Power Bowl

Ingredients

  • 1/2 cup cooked quinoa or yams
  • 1/4 avocado
  • 1 cup cooked, diced chicken
  • 1/2 bell pepper, sliced
  • 1 cup baby spinach or lettuce
  • 1/2 cup cherry tomatoes, halved
  • 1 tbsp Maple Garlic Dressing (see below)

Preparation

1. Add quinoa or yams to the bottom of a bowl.
2. Top with spinach or lettuce.
3. Add chicken, bell pepper, tomatoes, and avocado.
4. Drizzle with about 1 tablespoon dressing.
5. Toss lightly or eat layered.

Recipe Note

Maple Garlic Dressing (makes extra — store in fridge)
⅛ cup white balsamic vinegar
¼ cup olive oil
2 tsp honey mustard or dry mustard
Salt & pepper to taste

Whisk or shake in a jar.
