Power Bowls are perfect for meal prep. This is a great way to use up leftover Donair, then simply assemble with cooked grains, sliced veggies, and a dressing! You’ll have enough bowls for lunches for the work week.

Donair Power Bowl

Ingredients

  • ½ cup prepared Roasted Garlic Aioli
  • 1½ tbsp hot water
  • ¼ tsp sugar, optional
  • 2 English cucumbers
  • 3 pints cherry tomatoes, preferably multicoloured
  • 1 small red onion
  • 5 cups cooked quinoa
  • ½ recipe prepared Donair, sliced

Preparation

  1. To make dressing whisk together aioli, hot water, and sugar (if using) in a small bowl. Set aside. 
  2. Peel cucumbers lengthwise into ribbons. Slice tomatoes in half. Cut the onion in half; thinly slice. 
  3. Divide quinoa, veggies, and donair between five bowls. Drizzle with dressing.

Recipe Note

Recipe tip: To prepare a large batch of quinoa, combine 2 cups uncooked quinoa with 4 cups water or broth. Bring to a boil over medium-high heat. Once boiling, lower the heat, cover, and let it simmer for 15 minutes. Turn off the heat and let it sit, covered, for 5 minutes. This finishes steaming. Gently fluff with a fork before serving. This recipe yields about 5 cups of quinoa (perfect for this power bowl recipe!).
