Cream of Broccoli Soup

Cream of Broccoli Soup is a comforting classic: a rich and velvety puree of broccoli blended with milk and a hint of dill. Bonus! Broccoli is a good source of Vitamin A, E, C and selenium known for their cancer preventing powers.

Cream of Broccoli Soup

Ingredients

  • 2 Tbsp butter
  • 1 small onion, diced
  • 2 Tbsp all-purpose flour
  • 3 cups milk, heated
  • 1 cup prepared Nourish Broth
  • 1 lb (450 g) broccoli, steamed and pureed
  • 1 Tbsp Lemon Dilly
  • SPG or salt and pepper to taste

Preparation

1. In a pot, melt butter over medium heat, sauté onion until soft for 3 - 5 minutes
2. Add flour and stir for 1 - 2 minutes.
3. Slowly whisk in milk and Nourish Broth. Bring to boil whisking constantly, until soup has thickened.
4. Whisk in broccoli puree and Lemon Dilly. Simmer for 5 more minutes.
5. Season with SPG or salt and pepper, to taste.

Recipe Note

Swap broccoli for cauliflower, carrots or spinach. Top with cheese or a squeeze of lemon.
