Ingredients
2 English cucumbers
2 bell peppers
1/2 small red onion
1 pint cherry tomatoes
1/2 cup pitted Kalamata olives
1/2 cup crumbled low-fat feta cheese
2 tbsp Greek Dressing mix
3/4 cup olive oil
1/4 cup red wine vinegar
Preparation
Coarsely chop cucumbers, peppers, and onion. Cut tomatoes in half. Place in a large bowl; add olives and cheese.
In a cruet, combine dressing mix with oil and red wine vinegar. Shake to mix.
Pour dressing over veggies; gently stir to mix. Serve immediately.
