An Italian classic, but make it handheld - Chicken Parm Sandwiches! This is a perfect blend of flavour in every bite, with tender, juicy chicken, gooey melted cheese, and Marinara Sauce. These sandwiches are so good, you might just start a whole new family dinner tradition! We like ours with a little Roasted Garlic Aioli.

Ingredients

2 lbs (900 g) boneless, skinless chicken breasts, about 4
¼ cup mayonnaise or plain 2% Greek yogurt
1 pkg Italian Meatball Seasoning
1 cup prepared Marinara Sauce
2 cups arugula or baby spinach
½ cup mozzarella
8 buns
Optional - Roasted Garlic Aioli

Preparation

  1. Preheat oven to 425° F. 
  2. Slice chicken in half (horizontally). To slice, place one hand on one breast and press down firmly. Curve fingers up slightly for safety. Carefully slice meat horizontally. Repeat with the remaining chicken breasts. You should have eight pieces in total.
  3. In a bowl, toss chicken with mayo until fully coated.
  4. Place seasoning in a shallow dish. Using tongs or your hands, add chicken one piece at a time, rotating and pressing to coat. 
  5. Place chicken on pan with space in between. Bake 15 min. 
  6. Remove the pan from the oven and top each chicken breast with ¼ cup of sauce and 1 tbsp of cheese. Bake an additional 5 min, or until the chicken is fully cooked. 
  7. Split and toast buns, if desired. Spread Roasted Garlic Aioli on buns (if desired) top with chicken and arugula .
