Cheesy Taco Pasta

Cheesy Taco Pasta

Ingredients

  • 1 cup broccoli florets chopped
  • 1 cup water
  • 1 1/2 lbs (675 g) lean ground beef, chicken or turkey
  • 1 tomato, diced
  • 2 tbsp Taco Seasoning
  • 1 bell pepper, diced
  • 2 cups dried pasta
  • 1/2 cup crumbled feta

Preparation

  1. Cook 2 cups of dried pasta according to the package instructions.
  2. While pasta is cooking, in a sauté pan over medium heat, brown beef for 8–10 min, stirring frequently. Drain excess fat.
  3. Stir seasoning with water and add to pan.
  4. Add tomato, pepper, and broccoli. Simmer for 5 min, or until sauce is thickened.
  5. Sit in pasta until evenly coated and warmed through, 1–2 min. Sprinkle with feta cheese, green onion, and salsa, if desired.

Recipe Note

To balance your plate serve with a green salad drizzled with your favourite Epicure dressing.
