Ingredients

  • 1 tbsp Guacamole Dip Mix or Herb & Garlic Dip Mix
  • 2 tbsp olive oil (divided)
  • 1 tbsp each vinegar and water
  • 8 small whole-grain or corn tortillas (warmed)
  • 1 lb (450 g) tilapia or other white fish fillets
  • 2 bell peppers
  • 1/4 red onion
  • 4 cups baby spinach
  • 1-2 tbsp BBQ Chicken & Rib Rub
  • 1 tbsp lemon juice
  • 1/2 cup ketchup

Preparation

  1. Preheat oven to 400°F.
  2. In small bowl, stir together Guacamole Dip Mix, vinegar, water and 1 tbsp oil. Let stand 5 min.
  3. Meanwhile, thinly slice bell peppers and onion. Place on a lined sheet pan. Top with fish fillets.
  4. Stir BBQ Chicken & Rib Rub into ketchup with lemon juice and 1 tbsp oil. Spoon over veggies and fish, stirring to coat.
  5. Bake in preheated oven for 12-18 min, or until fish is cooked.
  6. Remove fish from oven; let stand for 1 min.
  7. Break fish into small chunks with fork; divide fish and veggies in warm tortillas. Top with spinach and other toppings as desired; drizzle with sauce.
