Banana Bread Pancakes

If you are a fan of banana bread, you will love these pancakes. Gluten free with the flavor of banana bread and close to the texture of a classic pancake. Top with butter, banana slices, warm maple syrup (and greek yoghurt if you want to up the protein!)

Banana Bread Pancakes

Ingredients

  • 1 large ripe banana
  • 1 pkg Sweet Banana Bread Mix
  • 1 egg
  • 1 cup milk
  • 2 tbsp oil, for batter
  • 1 -2 tablespoon unsalted oil or butter for pan (more as needed)
  • ½ cup finely chopped walnuts (optional)

Preparation

  1. Place banana in a large mixing bowl and mash.
  2. Whisk in egg, milk, and 2 tbsp oil. Add mix and walnuts (optional). Let batter rest 3 min, it will continue to thicken. If batter is too thick, add water 1 tbsp at a time to adjust consistency.
  3. Meanwhile heat oil or butter in pan over medium heat.
  4. Scoop ¼ cup of batter at a time into pan 2 or 3 at a time, leave space between pancakes.
  5. Cook 2-5 min, look for bubbles to appear on top of pancake batter. Flip, cook for 1-2 min.
  6. Repeat steps 3-5, cooking times will vary.

Recipe Note

The batter will thicken over time. If needed between batches, add water, 1 tbsp at a time, to thin it out to desired consistency.
