Apple & Tuna Sandwich

Ingredients

  • 2 cans (6 oz/170 g each) light tuna, packed in water (drained)
  • 8 slices whole-grain bread
  • 1 tbsp 3 Onion Dip Mix or Lemon Dilly Dip Mix
  • 2 apples (cored and diced)
  • 5 tbsp 2% plain Greek yogurt or dairy-free alternative
  • 1 cup mixed greens

Preparation

  1. In a medium bowl, fluff tuna with a fork. Add apple, yogurt, and dip mix. Stir to blend well (will last 2–3 days in your fridge).
  2. Place mixed greens on four slices of bread and spread tuna on top. Cover each with second slice of bread.
  3. Cut diagonally and serve.

Make it Vegetarian: Substitute the tuna for hard-boiled eggs
