Ingredients


Makes: 4 servings
  • 1/4 C (60 ml) olive oil
  • 1 lemon
  • 1 Tbsp (15 ml) Greek Dressing Mix, or Spinach Dip Mix
  • 1 can (14 oz/ 398 ml) chickpeas, rinsed and drained
  • 1 small red or green bell pepper, diced
  • 1 small onion, finely diced
  • 1 radishes, optional
  • Sea Salt (Grinder), to taste
  • Black Pepper (Grinder), to taste

Preparation


 
  • Whisk together olive oil, lemon juice and dressing Mix in mixing bowl.
  • Add chickpea, peppers, onions, andradishes, tossing to coat. Season to taste with salt and pepper. Serve at room temperature.

Tip


 

Tip: Lighten up! Try using only 2 Tbsp (30 ml) oil and add 1 additional Tbsp (15 ml) lemon juice – you’ll save 70 calories, 7 g fat (1 g saturated) per serving!
