Strawberry Shortcut Cake
2Quick Biscuits, halved
2 cups fresh strawberries—washed, hulled, and sliced
1 cup 2% Greek yogurt, plain
4 strawberries, sliced
Toppings (optional): mint leaves and a few strawberries, halved
- Place fresh strawberries in a Round or Multipurpose Steamer. Microwave on high for 2–3 min. Then, mash berries with a fork or Ground Meat Separator; set mashed berries aside.
- Meanwhile, combine Greek yogurt and Summer Berry Sweet Dip Mix in a bowl. Set bowl aside.
- Place 1 biscuit half in each of 4 bowls; top each with sliced strawberries and 1⁄4 cup Greek yogurt mixture. Garnish each bowl with a mint leaf and halved strawberries, if desired. Enjoy!
