Steamer Tandoori

Ingredients
8 boneless, skinless chicken thighs or 2–3 large chicken breasts, cut into bite-sized pieces
1 pkg Tandoori Chicken Curry Seasoning
1 can (19 oz /540 ml) chickpeas, drained and rinsed
3 cups water
1⁄3 cup sliced green olives, optional
1⁄3 cup sliced dried apricots, optional
12 pitted prunes or dates, optional
zest and juice of 1 lemon
Preparation
- Place chicken in a Multipurpose Steamer. Cover and microwave on high for 8 minutes, stirring halfway through.
- In a large measuring cup, dissolve contents of seasoning package in water. Pour over chicken.
- Add next five ingredients and microwave for 8 minutes.
- Very carefully remove from microwave and stir.
- Add lemon zest and juice immediately before serving.
