Lemony Shrimp Skewers

Ingredients
2 bell peppers
2 small zucchini
1 small red onion
1 bag (340 g/12 oz) frozen, peeled, raw jumbo shrimp, thawed
2 tbsp olive oil
Toppings (optional): chopped cilantro, squeeze of lemon juice
Preparation
- Preheat grill to medium high heat. Lightly brush with oil.
- Chop peppers, zucchini, and onion into 1–2" pieces and place in a large bowl. Add shrimp, seasoning, and oil; toss to coat. Thread veggies and shrimp onto Grill Boss Skewers.
- Grill skewers 2–3 min per side, or until shrimp are bright pink and veggies are tender. Serve with toppings, if desired.
