Greek Breakfast Wraps

Ideal light weekday lunch and picnic fare too.
Ingredients
4 eggs or 8 egg whites, beaten
1 tbsp3 Onion Dip Mix
Black Pepper (Grinder), to taste
1⁄4 cupDillicious Tzatziki, prepared
4 (10 in/25 cm) whole-grain tortillas, warmed
1 red pepper, sliced in strips
1⁄3 cup drained and chopped marinated artichoke hearts
1⁄4 cup low-fat feta cheese, crumbled
Preparation
- In a mixing bowl, using Piano Wire Whisk, whisk eggs, 3 Onion Dip Mix, Black Pepper, and Tzatziki.
- Lightly grease fry pan. Pour egg mixture into pan and cook over medium heat, stirring frequently until eggs are set.
- Top tortillas with pepper, artichokes, feta, and egg mixture. Roll tightly and serve hot.
