Ingredients

CUPCAKE:

1 cup
flour
12 cup
cocoa powder
34 tsp
baking soda
34 tsp
baking powder
14 tsp
salt
34 cup
sugar

vegetable oil

buttermilk
1 tsp
vanilla
12 cup
boiling water

ICING:

2 tbsp
softened butter
2 12 cups
icing sugar

egg
1 tsp
vanilla
2 tbsp
light cream

Preparation

CUPCAKES:

  1. Preheat oven to 350° F (175° C).
  2. Lightly spray Perfect Portion Muffin Pan with vegetable oil or line with paper cups.
  3. Whisk together first 5 ingredients.
  4. In a small bowl, whisk together sugar, oil, egg, buttermilk and vanilla.
  5. Combine wet and dry ingredients. Using a Corner Spatula, stir in boiling water until batter is smooth.
  6. Scoop into Muffin Pan and bake for 18–20 minutes.

ICING:

  1. Cream butter with icing sugar. Beat in egg and vanilla, and cream to make spreadable.
