Chocolate Cupcakes

Ingredients
1 cup flour
1⁄2 cup cocoa powder
3⁄4 tsp baking soda
3⁄4 tsp baking powder
1⁄4 tsp salt
3⁄4 cup sugar
1⁄3 cup vegetable oil
1 egg
1⁄2 cup buttermilk
1 tsp vanilla
1⁄2 cup boiling water
Preparation
- Preheat oven to 350° F (175° C).
- Lightly spray muffin pan with vegetable oil or line with paper cups.
- Whisk together first 5 ingredients.
- In a small bowl, whisk together sugar, oil, egg, buttermilk and vanilla.
- Combine wet and dry ingredients. Using Corner Spatula, stir in boiling water until batter is smooth.
- Scoop into Muffin Maker and bake for 18–20 minutes.
