Preparation
  1. Preheat oven to 350° F (175° C).
  2. Lightly spray muffin pan with vegetable oil or line with paper cups.
  3. Whisk together first 5 ingredients.
  4. In a small bowl, whisk together sugar, oil, egg, buttermilk and vanilla.
  5. Combine wet and dry ingredients. Using Corner Spatula, stir in boiling water until batter is smooth.
  6. Scoop into Muffin Maker and bake for 18–20 minutes.
