Ingredients


Makes: approximately 3 dozen
  • 1/2 C (125 ml) dark chocolate chips
  • 1/2 C (125 ml) sugar
  • 1/3 C (80 ml) dark rum
  • 1/4 C (60 ml) corn syrup
  • 2 1/2 C (625 ml) finely chopped chocolate wafer crumbs
  • 2 tsp (10 ml) Cinnamon (ground)
  • 3/4 C (180 ml) finely chopped nuts
  • cocoa, or icing sugar, ground nuts, chocolate wafer crumbs or chocolate sprinkles, for decorating – optional

Preparation


 
  • Melt Chocolate in stainless-steel bowl over hot water.
  • Mix in sugar, rum and corn syrup. Stir in chocolate wafer crumbs, Cinnamon and nuts. Mix thoroughly. Scrape down sides of bowl, cover and refrigerate until mixture is firm.
  • Form into 1” (2.5 cm) balls, roll in your choice of cocoa, icing sugar, ground nuts, chocolate wafer crumbs or chocolate sprinkles.
  • Layer in an airtight container, placing a sheet of parchment paper between layers. Rum balls will keep for up to 1 month in freezer.
