Creamy, zesty, and refreshing, these shrimp and avocado boats are a light yet flavorful bite. Served in avocado shells for a fun presentation, they’re perfect for entertaining or a quick lunch

Ingredients
- 1/2 cup light sour cream
- 1 cup salad shrimp (reserve a few for garnish)

3 tbsp Guacamole Dip Mix
- 1 tbsp lemon juice
- 2 tsp chives
- 2 ripe avocados (mashed (reserve avocado shells))
Directions
- Combine avocado, sour cream, lemon juice and dip mix. Refrigerate 1 hour to allow flavours to mellow.
- Fold shrimp into prepared guacamole.
- Scoop filling into reserved avocado shells. Garnish with reserved shrimp and a sprinkle of chives.
